Gluten-Free Vanilla-Flax French Toast
- 2 pieces Gluten-Free Multigrain Bread
- 1 egg
- ¼ cup skim milk
- 1 – 2 Tbsp Carrington Farms Organic Milled flax
- ½ tsp vanilla
Directions:
Whisk egg, milk, flax and vanilla together. Heat sprayed pan over medium heat. Place bread in egg mixture and coat both sides. Place bread in hot pan and cook for about 3 minutes per side or until golden brown. Serve with yogurt, fresh berries or syrup!
Chicken Breast with Flax and Herb Stuffing
- 2 boneless, skinless chicken breasts (6 oz./375 g each)
- 2 slices whole wheat bread cut into ½ inch (1 cm) cubes
- 1 ½ tsp. canola oil
- 1 tsp. minced onion
- 1 tsp. minced red pepper
- 2 tsp. chopped, sundried cranberries
- 1-2 Tbls. Carrington Farms Organic Milled flaxseed
- 1 large egg
- 1 tbsp. white wine*
- 1 tsp. chopped parsley
- canola oil
- salt and pepper to taste
- paprika to taste
Directions
- Heat oil in fry pan over medium-low heat.
- Add onion and red pepper. Sauté 1 minute.
- Add cranberries. Cook 2 minutes.
- Remove mixture from heat, let cool a few minutes.
- In a bowl, combine bread, egg, wine, milled flaxseed, parsley, onion-red pepper mixture.
- Season with salt and pepper. Mix well.
- Between two sheets of wax paper flatten chicken breast to ¼ inch (6 mm) thickness.
- Spread ½ cup (125 mL) stuffing mixture on breast. Roll up. Repeat with other breast.
- Preheat oven to 350º F (180º C).
- Place chicken rolls on a baking sheet that has been sprayed with a nonstick cooking spray.
- Lightly brush the top of the chicken rolls with canola oil. Sprinkle with salt, pepper and paprika.
- Bake 40 to 45 minutes. Rolls should feel firm and bounce back when gently pressed on top with fingertip.
*Apple juice or chicken broth can be substituted for white wine.
Yield: 2 servings

Flaxseed Shake
Serves: 1
Cook Time: 1 minute
Ingredients
- 6 ice cubes
- 1⁄2 cup fresh berries (blueberries, strawberries, raspberries, etc)
- 2 teaspoons organic agave nectar
- 1-2 tablespoons Carrington Farms Organic Milled flaxseed
- 1 cup cold water
- scoop vanilla protein powder or Whey Protein Powder
- 1 teaspoon cinnamon
- 1⁄4 banana
- 1⁄2 tablespoon flaxseed oil optional
Place all ingredients in a blender in the order listed. Blend on low for 10 seconds or until smooth. Serve immediately.
Flax Burger
Prep time: ~15 mins
- 1 pound thawed ground beef, lean ground turkey or bison, veal or your favorite meat.
- 2 Tbs finely chopped onion
- 1 clove garlic minced
- 2 Tbs Carrington Farms Organic Milled flaxseed
- 2 Tbs water
- 3/4 cup soft bread crumbs (1 slice of bread)
- 1 beaten egg
- 1 Tbs mustard
- 1/4 tsp sea salt
- 1/4 tsp pepper
Directions
- Mix together meat, onion, garlic, flax and bread crumbs.
- Lightly beat water and egg together and add to mixture. Add mustard, salt and pepper.
- Cook on a grill or stove top until no pink remains (~12 mins)
- Optional cheeseburgers: top with slice of your choice of cheese at end of cooking and grill or broil for about 1 min.
Makes 4 -3/4 inch thick patties or 6 -1/2 inch thick patties.

Jen’s banana muffin recipe
Ingredients
- 2 cups flour (1cup whole wheat, 1 cup white)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 eggs
- 1 cup sugar
- 5 very ripe bananas
- 1 tsp vanilla
- 1/2 cup vegetable oil
- 1 tsp cinnamon
- 1/4 cup flax seeds
- approx 1/2 cup all bran cereal
- 1/4 cup wheat germ
- chocolate chips
- chopped walnuts (optional)
Preparation
- Preheat oven to 350
- Combine flour, baking soda, baking powder, cinnamon salt & sugar
- In a separate bowl, combine mashed bananas, vanilla & oil
- Add to banana mixture flax seeds, wheat germ & bran cereal. let soften for a few minutes
- Add chocolate chips
- Combine all ingredients
- Spray muffins tins with cooking spray
- Bake approx 20 mins (depends on size of muffins)

Ways to use Carrington Farms Organic Milled Flax Seed
- sprinkle on salads to taste
- spread peanut butter on a rice cake and coat with flax on top
- add a heaping Tablespoon to your yogurt
- add to egg salad to taste
- use in smoothies
- add a Tablespoon to a serving of cottage cheese
- Coat Chicken or Fish with our Roasted Flax Seed or Milled Flax seed and bake instead of bread crumbs – or add to your bread crumbs
- Add a heaping Tablespoon when scrambling eggs, before cooking.
- Bake into muffins or bread
- Take your favorite pancake mix add 2 heaping tablespoons of Carrington Farms Milled Flax, add a teaspoon of vanilla extract, and 1 ½ teaspoon cinnamon
- Add to meatballs

Substituting Flax Seed for Fat
3 Tablespoons Carrington Farms Organic Milled Flax Seed = 1 Tablespoon Margarine, butter or cooking oil.
Substitute for all or some of the fat depending on the preference. To substitute for all of the fat with CF Milled flax seed, increase liquid by 75% as ground flax absorbs liquid. Note that baked goods brown quicker than normal.

Substituting Flax Seed for Eggs
1 Tablespoon of Carrington Farms Organic Milled Flax Seed plus 2-3 tablespoons water equals one egg.
Substitute a 1:3 ratio of CF Milled flax seed and water mixture for each egg in recipes. Allow to sit for several minutes together before adding to your recipe. In some recipes, you can leave the ground flax in the blender and add the other wet ingredients to it, thus saving you the extra step of the bowl.

Flax Seed Brownies
Makes 36 regular sized brownies.
Ingredients:
- 1/4 lb butter (1 stick)
- 3 cups sugar or sweetener alternative
- 1 Tbsp vanilla
- 4 eggs (room temp is best)
- 1/2 cup cocoa
- 1 tsp salt
- 4 oz unsweetened chocolate
- 2 cups milled flax seed
- 1 Tbsp baking powder
- 1/3 cup cream
- 2/3 cup water
- 1 cup walnuts (optional)
Preparation:
- Preheat oven to 350 F and grease baking pan.
- Cream the butter until fluffy.
- Add the sugar to the butter and cream them together until fully combined (aim for a fluffy texture).
- Add the vanilla and beat the eggs into the mixture, one at a time.
- Add salt and cocoa, beat well.
- Add chocolate, beat until fluffy.
- Add the rest of the ingredients and mix well to combine.
- Pour into a pan and bake for 35 to 40 minutes. (You can test if they're ready by sticking a toothpick into the brownies. If it comes out clean, or almost-so, then they're done.)
- Cool, then cut into 36 squares.

Apple & Flax Seed Muffins
Ingredients:
Makes 12 to 24 muffins depending on your preference.
- 1 and 1/4 cup milled flax seed
- 2 teaspoons baking powder
- 1 Tablespoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon salt
- 3/4 cup sugar or sweetener
- 4 large eggs
- 1/4 cup oil
- 1/2 cup liquid (syrup or water)
- 1 Tablespoon vanilla
- 1 medium apple, chopped fairly finely
- 1/2 cup chopped pecans (optional)
Preparation:
- Preheat oven to 350 F. Grease a 12-muffin tin very well.
- Mix the dry ingredients together, then add the rest of them.
- Let batter stand 10 minutes, then put into the muffin pan and bake for about 18 minutes until toothpick comes out clean and muffins just barely start to pull away from the sides of the tin.

Flax Seed Cookies
Preparation:
- 1-cup oatmeal blended until flour like
- ¼-cup flax seeds blended until flour like
- Pour into bowl
- 1 can cannellini beans drained and blended till smooth
- ½-cup oatmeal
- ¼ cup flax seeds
- ½ cup or so of raisins
- ½-cup applesauce
Make a wet type texture not too dry, not soupy. And taste it.
Optional:
- ¼ cup pure maple syrup or if watching sugar you can use agave syrup or pure raw sugar.. or none of these.. up to your taste
- Can add chips, nuts, or sesame seeds…
- ¼-cup millet
- ¼ cup amaranth... (The grain not the alcohol)
- Bran buds can be added... lots of fiber
- Grape nuts can be added..
- All up to you…
Baking time varies on the wetness.. keep testing them and don’t overcook.. They don’t raise much
