Chocolate Energy Balls

Ingredients:

  • 1 1/2 cups raw walnut halves
  • 1 cup dates (soft & squishy; pits removed)
  • 1/4 cup cocoa powder
  • 1/4 tsp fine sea salt
  • 1 tbsp Carrington Farms Organic Chia Seeds
  • 1/2 cup shredded coconut

Directions:

  1. In a large food processor fitted with an "S" blade, grind the walnuts into a fine meal.
  2. Add the rest of the ingredients and process again for about 2 minutes until a sticky, uniform dough is formed.
  3. Scoop the batter by heaping tablespoons onto a plate or baking sheet lined with parchment paper to prevent sticking.
  4. Roll the balls between your hands. Next, roll the balls over Carrington Farms Organic Chia Seeds and shredded coconut until coated.
  5. Store the balls in an airtight container in the fridge for up to 2 weeks or in the freezer for up to 3 months.
